Air Fryer Fajita Veggies make a quick and easy side dish for any Mexican or Latin-American-inspired meal. Or they can be added to a variety of dishes like burrito bowls, tacos, and more!
You just need two bell peppers, an onion, and your spice cabinet to transform these simple ingredients into a rich and flavorful dish.
We love serving them as a side dish to round out a super cozy meal like beans and rice. You can also portion them out as part of meal-prepped burritos or lunch bowls. Enjoy!

Ingredients
Here's what you need to make this Air Fryer Fajitas Recipe.
- bell peppers (any color)--I like the classic combo of red and green, but use whatever colors you like or whatever you have at home.
- medium red onion--Any type of onion is fine but I prefer the red (sometimes called purple) onions for this recipe.
- cooking oil-- Olive oil or avocado oil are fine.
- granulated garlic--I don't recommend fresh garlic for this recipe as it burns quickly. If you want to use fresh minced garlic, just add it a minute or two before the fajitas are done cooking.
- dried oregano--For a depth of flavor.
- cumin--For smokiness.
- chili powder--For a touch of spice and richness of flavor.
- salt--Salt just enhances the flavors of the fajitas. Feel free to adjust the amount of salt to meet your own taste.
- chopped cilantro--This is optional, but it adds a nice flavor and color.

Instructions
Here are step-by-step instructions with photos.
- Preheat the air fryer to 425F or 210C. (If using a liner, do not put it in the air fryer while preheating.)
- Slice the bell peppers and onions into medium-width strips.
- Add the pepper and onion strips to a mixing bowl. Drizzle with cooking oil and sprinkle on the seasonings. Mix until everything is evenly coated.
- Add the fajita veggies to a lined air fryer basket. Cook for 8 to 10 minutes, stopping occasionally to shake the basket.
- The fajita veggies are done when the edges are nicely browned. Top with chopped cilantro and serve right away!
Hint: I love to use an air fryer liner for easy cleanup! Just don't put it in while the air fryer is preheating, as this can be a fire hazard.
Variations
Here are some ways to switch things up!
- Spicy - add a pinch of cayenne pepper.
- Rainbow - for even more color use ½ of 4 bell peppers: red, orange, yellow, and green.

Here are a few safety tips for cooking with an air fryer.
- Cook food to a minimum temperature of 165 °F (74 °C)
- Use oils with a high smoking point to avoid harmful compounds
- Always use oven mitts or some protective hand covering when shaking the basket or removing food from the air fryer.
- Hot air comes out the back of the air fryer. Try to keep the back of the air fryer at least a hands length away from the wall, other ingredients, or anything else that could be damaged by heat.
