Serve them as an easy side dish or add them to a salad. They'd also make excellent breakfast potatoes for your next Sunday brunch!

Ingredients
Here's what you need to make this recipe.
- potatoes-- I used Yukon Gold potatoes. Russet potatoes are also fine. I would avoid red-skinned potatoes for this recipe.
- cooking oil-- I used olive oil.
- dried oregano-- For extra flavor.
- paprika-- I used the "sweet" variety of paprika, which is sometimes just called paprika (as opposed to the smokey variety... although smokey paprika would also be delicious!)
- garlic powder-- I also tested this recipe with onion powder and I thought it was equally good.
- salt--To enhance the flavors.

Instructions
Here are step-by-step instructions with photos.
- Preheat the air fryer to 400F or 200C. (Don't skip! This helps the potatoes crisp up without burning.)
- Wash the potatoes and remove any bad spots. Dice the potatoes into small cubes (about ½ inch or slightly smaller). (No need to peel!)
- Rinse the potatoes in cold water. Pat off the excess liquid with a clean dish towel.
- Add the diced potatoes to a mixing bowl and toss with the oil until all of the cubes are evenly coated.
- Sprinkle on the seasonings and mix until all of the potato cubes are evenly coated.
- Transfer the potato cubes to a lined air fryer basket. Cook for 16 to 20 minutes, shaking the basket halfway.
- The potatoes are done when they're nicely browned and crunchy on the outside and soft on the inside. Serve and enjoy right away!
Hint: Rinsing the potatoes and patting them dry helps remove some of the starch so they crisp up better on the outside. However, if you are in a rush for time, you could skip this step and they would still taste great!
Variations
The seasonings of these air fryer diced potatoes can be easily adapted to your preference. Here are some other ways to switch things up!
- Spicy - Swap the paprika for chili powder or cayenne.
- Herbs de Provence--Trade the oregano and paprika for a spice mix like Herbs de Provence.

- Extra-Extra Crispy - Try soaking the cubed potatoes in cold water for 20 to 30 minutes to remove excess starch. Then pat dry, add your seasonings, and air fry.

Top tip
Leave the skin on! Unless you don't like the skin, there's no reason to waste your time with peeling. Plus, the skins are nutrient-dense. Double win!
FAQ
I used Yukon Gold potatoes. Any kind of yellow or gold potatoes should work. Russet potatoes are also fine. I would stay away from red-skinned potatoes for this particular recipe.
You don't absolutely need a liner for this recipe, but I prefer to use one since it makes cleanup so much easier. If you use a liner, do not put it in the basket while the air fryer is pre-heating. Only add the liner before you add the potatoes. (Putting the liner in without food is unsafe because the liner will rise and come into contact with the heating element, which could start a fire.)
Choose the air fryer that best meets your needs. Consider things like price, size, and functionality. I personally love my Ninja Foodi 5-in-1 Grill and Air Fryer, because it has a bigger capacity, which better suits my family of four.

Air Fryer and food safety tips
Here are a few safety tips for cooking with an air fryer.
- Cook food to a minimum temperature of 165 °F (74 °C)
- Use oils with a high smoking point to avoid harmful compounds
- Always use oven mitts or some protective hand covering when shaking the basket or removing food from the air fryer.
- Hot air comes out the back of the air fryer. Try to keep the back of the air fryer at least a hands length away from the wall, other ingredients, or anything else that could be damaged by heat.
